Here’s a classic Snowball Cookies recipe (also known as Mexican Wedding Cookies or Russian Tea Cakes). They’re buttery, crumbly, and melt in your mouth 🤍


❄️ Snowball Cookies

Ingredients

  • 1 cup (225 g) unsalted butter, softened
  • ½ cup (60 g) powdered sugar (plus extra for rolling)
  • 1 tsp vanilla extract
  • 2¼ cups (280 g) all-purpose flour
  • 1 cup (120 g) finely chopped nuts (walnuts, pecans, or almonds)
  • ¼ tsp salt

Instructions

  1. Preheat oven:
    350°F / 175°C. Line a baking sheet with parchment paper.
  2. Cream butter & sugar:
    Beat butter and powdered sugar until light and fluffy.
    Mix in vanilla.
  3. Add dry ingredients:
    Gradually mix in flour, salt, and nuts until dough comes together.
  4. Shape:
    Roll dough into 1-inch balls.
    Place on baking sheet about 1 inch apart.
  5. Bake:
    12–15 minutes, until bottoms are lightly golden (tops stay pale).
  6. First coating:
    Let cookies cool 5 minutes, then gently roll in powdered sugar.
  7. Second coating:
    Once completely cool, roll again in powdered sugar.

  • Finely chopped nuts give best texture
