Irresistible Spanish Rice Recipe

Here’s an Irresistible Spanish Rice recipe—fluffy, flavorful, and just like the kind you get at a great Mexican restaurant 🍚✨


🍅 Irresistible Spanish Rice (Mexican-Style)

Ingredients

  • 1 cup long-grain white rice
  • 2 tbsp vegetable oil
  • ½ small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup tomato sauce (or crushed tomatoes, blended smooth)
  • 2 cups chicken broth
  • ½ tsp cumin
  • ½ tsp chili powder
  • ¼ tsp paprika
  • Salt, to taste

Optional:

  • ½ cup frozen peas or mixed vegetables
  • ¼ cup chopped cilantro
  • Squeeze of lime

Instructions

  1. Toast the rice (key step!)
    Heat oil in a saucepan over medium heat.
    Add rice and stir constantly until lightly golden and nutty-smelling (3–5 minutes).
  2. Add aromatics
    Stir in onion and garlic. Cook 1 minute.
  3. Add tomatoes & spices
    Add tomato sauce, cumin, chili powder, paprika, and salt. Stir well.
  4. Add broth
    Pour in chicken broth. Bring to a gentle boil.
  5. Simmer
    Cover, reduce heat to low, and cook 18–20 minutes until liquid is absorbed.
  6. Rest & fluff
    Remove from heat. Let sit covered 5 minutes.
    Fluff with a fork.
  7. Finish
    Stir in cilantro, veggies, and a squeeze of lime if using.

  • Use long-grain rice only
  • Don’t stir while simmering
  • Let it rest before fluffing
