🍗 Chicken Meatballs

Ingredients (makes ~20 meatballs)

  • 1 lb (450 g) ground chicken
  • ½ cup breadcrumbs (plain or seasoned)
  • ¼ cup grated Parmesan (optional)
  • 1 egg
  • 2 cloves garlic, minced
  • 2 tbsp fresh parsley, chopped (or 1 tsp dried)
  • ½ tsp salt
  • ¼ tsp black pepper
  • ½ tsp Italian seasoning (optional)
  • 1–2 tbsp olive oil (for frying)

Instructions

  1. Mix ingredients
    • In a bowl, combine ground chicken, breadcrumbs, Parmesan, egg, garlic, parsley, salt, pepper, and Italian seasoning.
    • Mix gently—overmixing makes meatballs tough.
  2. Form meatballs
    • Roll mixture into 1–1.5 inch balls.
    • Place on a plate or baking sheet.
  3. Cook meatballs
    • Pan-fry: Heat olive oil in a skillet over medium heat. Cook meatballs 6–8 minutes, turning occasionally, until golden and cooked through.
    • Bake: Preheat oven to 400°F / 200°C. Bake on a parchment-lined sheet 15–18 minutes, until cooked through.
    • Simmer in sauce: Add uncooked meatballs directly into tomato or gravy sauce. Simmer 15–20 minutes.
  4. Serve
    • With pasta & sauce, in a sub sandwich, or on their own with dipping sauce.

  • Extra juicy: Add 1–2 tbsp milk or grated onion to the mixture
  • Spicy: Add red pepper flakes or chopped jalapeño
  • Gluten-free: Use almond flour or gluten-free breadcrumbs
  • Asian twist: Use ginger, soy sauce, and sesame oil instead of Italian seasoning
