Instructions

    • Place chopped onion and garlic in the bottom of the slow cooker.
  2. Add chicken
    • Season with salt, pepper, and paprika.
    • Place chicken on top of the onions.
    • Pour chicken broth over the top.
    • Sprinkle dry onion soup mix or herbs over the chicken.
  3. Cook
    • Cover and cook on low 6–7 hours or high 3–4 hours, until chicken is tender.
  4. Make the gravy
    • Remove chicken and keep warm.
    • Pour slow cooker juices into a saucepan.
    • Whisk 2 tbsp flour or cornstarch into ¼ cup cold water, then stir into the juices.
    • Heat over medium, stirring until thickened (~5 minutes).
    • Optionally, stir in butter for extra richness.
  5. Serve
    • Slice or shred chicken and pour gravy over top.
    • Garnish with parsley.
    • Serve with mashed potatoes, rice, or biscuits.
