Spanakopita

Here’s a classic Spanakopita recipe—flaky Greek spinach and feta pie that’s perfect as an appetizer, side, or main 🥧🌿


🇬🇷 Spanakopita (Greek Spinach Pie)

Ingredients (8 servings)

Filling:

  • 1 lb (450 g) fresh spinach, washed and chopped (or 1 package frozen, thawed & drained)
  • 1 cup feta cheese, crumbled
  • ½ cup ricotta cheese (optional for creaminess)
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 2 eggs, lightly beaten
  • 2 tbsp fresh dill, chopped (or 1 tsp dried dill)
  • Salt & black pepper, to taste
  • 2 tbsp olive oil

Phyllo pastry:

  • 8–10 sheets phyllo dough, thawed
  • ¼ cup butter or olive oil, melted (for brushing layers)

Instructions

  1. Prepare the filling
    • Heat olive oil in a skillet over medium heat. Sauté onion and garlic until soft.
    • Add spinach and cook 2–3 minutes until wilted (or just warm for frozen spinach).
    • Remove from heat and let cool slightly.
    • Stir in feta, ricotta, eggs, dill, salt, and pepper.
  2. Prepare phyllo layers
    • Preheat oven to 350°F (175°C).
    • Brush a baking dish lightly with melted butter or oil.
    • Layer 4–5 sheets of phyllo, brushing each sheet lightly with butter/oil.
  3. Add filling
    • Spread the spinach-feta mixture evenly over phyllo.
  4. Top phyllo layers
    • Layer remaining phyllo sheets on top, brushing each with butter/oil.
    • Tuck in edges and brush the top sheet generously.
  5. Bake
    • Bake 35–40 minutes until golden brown and crispy.
  6. Serve
    • Let cool 5–10 minutes, then cut into squares or triangles.
    • Serve warm or at room temperature.

  • Crispier top: Use more phyllo sheets and brush each layer generously with butter.
  • Cheese mix: Add grated Parmesan or kefalotyri for extra flavor.
  • Mini spanakopita: Roll filling into small phyllo triangles for finger food.
  • Make-ahead: Assemble in advance, cover, and bake within 24 hours.
