Ingredients (4–6 servings)

Meat & Vegetables

  • 1 lb (450 g) beef stew meat or pork shoulder, cubed
  • 2–3 tbsp vegetable oil
  • 1 medium onion, chopped
  • 2–3 cloves garlic, minced
  • 2 medium potatoes, peeled and diced
  • 2–3 roasted green chiles, peeled, seeded, and chopped (or 1 can diced green chiles)
  • 1 medium carrot, diced (optional)
  • 2 cups beef or chicken broth

Seasonings

  • 1 tsp cumin
  • 1 tsp dried oregano
  • ½ tsp smoked paprika (optional)
  • Salt & black pepper, to taste
  • 1 tbsp flour (optional, for thicker stew)

Optional Garnish

  • Fresh cilantro
  • Lime wedges
  • Shredded cheese or sour cream

Instructions

  1. Brown the meat
    • Heat oil in a large pot or Dutch oven over medium-high heat.
    • Season meat with salt and pepper.
    • Sear until browned on all sides. Remove and set aside.
  2. Sauté aromatics
    • In the same pot, sauté onion until soft (~3–4 minutes).
    • Add garlic and cook 30 seconds.
  3. Add veggies & seasoning
    • Stir in potatoes, carrots (if using), and chopped green chiles.
    • Sprinkle in cumin, oregano, and paprika; stir to coat.
  4. Simmer the stew
    • Return meat to the pot.
    • Pour in broth, bring to a boil, then reduce heat to low.
    • Cover and simmer 45–60 minutes until meat is tender and potatoes are cooked through.
  5. Optional thickening
    • Mix 1 tbsp flour with 2 tbsp water to make a slurry.
    • Stir into stew and simmer 5 more minutes until slightly thickened.
  6. Serve
    • Garnish with fresh cilantro, a squeeze of lime, or shredded cheese.
    • Serve with warm tortillas, cornbread, or rice.

  • Spicy version: Add 1–2 chopped jalapeños or a few dashes of hot sauce
  • Vegetarian: Use potatoes, carrots, zucchini, and roasted green chiles; skip meat
