🥧 Melt-in-Your-Mouth Apple Pie
🍽️ Serves: 8
⏱️ Total Time: ~2 hours (includes prep, baking, and cooling)
🛒 Ingredients:
🧈 For the Buttery Crust (makes a double crust):
-
2 ½ cups all-purpose flour
-
1 tsp salt
-
1 tbsp sugar
-
1 cup (2 sticks) cold unsalted butter, cubed
-
6–8 tbsp ice water
💡 Shortcut: You can use store-bought pie crust, but homemade gives it that melt-in-your-mouth magic.
🍏 For the Apple Filling:
-
6–7 medium apples (mix of Granny Smith + Honeycrisp or Fuji), peeled & thinly sliced
-
2/3 cup granulated sugar
-
1/4 cup light brown sugar, packed
-
1 ½ tsp cinnamon
-
1/4 tsp nutmeg
-
1 tbsp lemon juice
-
3 tbsp all-purpose flour (for thickening)
-
2 tbsp cold butter, cut into small cubes (for dotting over filling)
🥚 Optional Egg Wash:
-
1 egg yolk + 1 tbsp milk (for a golden crust)
👩🍳 Instructions:
1. Make the crust:
-
In a large bowl, mix flour, sugar, and salt.
-
Cut in cold butter with a pastry cutter or fork until it looks like coarse crumbs.
-
Add ice water, 1 tbsp at a time, mixing until dough just comes together.
-
Divide dough in two, form discs, wrap in plastic, and chill for at least 30 minutes.
2. Prepare the filling:
-
In a large bowl, toss sliced apples with lemon juice.
-
Add sugars, cinnamon, nutmeg, and flour. Mix gently until coated. Let sit for 10 minutes.
3. Assemble the pie:
-
Roll out one dough disc and place in a 9″ pie dish.
-
Pour in apple filling and dot with cubes of butter.
-
Roll out second disc and place on top (or create a lattice).
-
Trim, seal, and crimp the edges. Cut slits in top if not using a lattice.
-
Brush with egg wash if desired.
4. Bake:
-
Preheat oven to 400°F (200°C).
-
Place pie on a baking sheet and bake for 20 minutes.
-
Reduce heat to 350°F (175°C) and bake an additional 35–45 minutes, or until apples are soft and crust is golden brown.
✅ Tip: If crust edges brown too fast, cover them with foil or a pie shield.
5. Cool to set:
-
Let pie cool at least 1 hour before slicing — this helps the filling thicken and keeps your slices clean.
🍨 Serve with:
-
Vanilla ice cream (classic)
-
A drizzle of caramel sauce
-
Fresh whipped cream
-
Or just a hot fork and no distractions 😄
💡 Tips for melt-in-your-mouth success:
-
Use very thin apple slices so they soften beautifully.
-
Don’t overwork the crust — cold butter and minimal handling = flakier texture.
-
Let the pie rest after baking — it improves both flavor and texture.
