1. Make the crust:

In a large bowl, mix flour, sugar, and salt.

Cut in cold butter with a pastry cutter or fork until it looks like coarse crumbs.

Add ice water, 1 tbsp at a time, mixing until dough just comes together.

Divide dough in two, form discs, wrap in plastic, and chill for at least 30 minutes.
2. Prepare the filling:

In a large bowl, toss sliced apples with lemon juice.

Add sugars, cinnamon, nutmeg, and flour. Mix gently until coated. Let sit for 10 minutes.
3. Assemble the pie:

Roll out one dough disc and place in a 9″ pie dish.

Pour in apple filling and dot with cubes of butter.

Roll out second disc and place on top (or create a lattice).

Trim, seal, and crimp the edges. Cut slits in top if not using a lattice.

Brush with egg wash if desired.
4. Bake:
