  • 2 tbsp honey or maple syrup

  • 1 tsp vanilla extract

  • 1 tbsp all-purpose flour or oat flour (optional, for thickness)

  • ½ cup fresh or frozen blueberries

  • Pinch of salt

  • Optional toppings: more berries, granola, almond slices, or a drizzle of honey


Instructions

  1. Preheat oven:
    350°F (175°C). Lightly grease 2–3 small oven-safe bowls or ramekins.

  2. Blend the base:

    • In a blender or food processor, combine cottage cheese, eggs, honey, vanilla, flour (if using), and salt.

    • Blend until smooth and creamy.

  3. Add blueberries:

    • Stir in blueberries gently (don’t blend them).

  4. Bake:

    • Divide the mixture evenly into the prepared bowls.

    • Bake for 25–30 minutes, until the tops are set and lightly golden.

    • They’ll puff up slightly, then settle as they cool.
