Beef and Cheese Biscuits

Ingredients

For the Biscuit Dough (or use store-bought biscuits):

  • 2 cups (250 g) all-purpose flour

  • 1 tbsp baking powder

  • ½ tsp baking soda

  • 1 tsp salt

  • ½ cup (1 stick / 115 g) cold butter, cubed

  • ¾ cup (180 ml) cold buttermilk (or milk with 1 tsp lemon juice)

  • 1 cup shredded cheddar cheese

For the Beef Filling:

  • 1 lb (450 g) ground beef

  • ½ cup onion, finely chopped

  • 2 cloves garlic, minced

  • ½ tsp salt

  • ¼ tsp black pepper

  • ½ tsp paprika or chili powder (optional)

  • ½ cup shredded cheddar or mozzarella cheese

  • Optional: 2 tbsp BBQ sauce or ketchup for flavor


Instructions

1. Make the Filling

  1. In a skillet over medium heat, cook ground beef and onions until browned, about 6–8 minutes.

  2. Add garlic, salt, pepper, and paprika. Stir to combine.

  3. Drain excess fat.

  4. Stir in cheese and any sauce you’re using. Let cool slightly.

2. Prepare the Biscuits

  1. Preheat oven to 425°F (220°C).

  2. In a large bowl, whisk together flour, baking powder, baking soda, and salt.

  3. Cut in cold butter using a pastry cutter or your fingers until mixture looks crumbly.

  4. Stir in cheese.

  5. Add buttermilk and stir just until dough comes together (don’t overmix).

3. Assemble

Option A: Drop Biscuits (quick version)

  • Fold the beef filling gently into the biscuit dough.

  • Drop large spoonfuls onto a parchment-lined baking sheet.

Option B: Stuffed Biscuits (hand pies style)

  • Roll out dough to about ½-inch thick.

  • Cut into circles (about 3 inches).

  • Place a spoonful of beef filling in the center of one circle, top with another, and pinch edges to seal.

4. Bake

  • Bake 12–15 minutes, until golden brown.

  • Brush tops with melted butter if desired.

5. Serve

Serve warm with a side of gravy, ketchup, or hot sauce.
