Instructions

  1. Preheat oven:
    Set to 425°F (220°C). A hot oven is key for crispy potatoes.

  2. Prep the potatoes:

    • Wash and cut potatoes into bite-sized chunks (about 1-inch pieces).

    • If using baby potatoes, just halve them.

    • Pat them dry with a paper towel (removes moisture for crispiness).

  3. Season:

    • In a large bowl, toss potatoes with olive oil, salt, pepper, garlic powder, paprika, and herbs until evenly coated.

  4. Roast:

    • Spread potatoes in a single layer on a parchment-lined baking sheet.
