🍲 Bubble Up Chicken Casserole
Ingredients (serves 6)
-
3 cups cooked chicken, shredded or cubed (rotisserie chicken works great!)
-
1 can (10.5 oz) cream of chicken soup
-
1 cup sour cream
-
1 cup shredded cheddar cheese (plus extra for topping)
-
1 can (16 oz) Pillsbury refrigerated buttermilk biscuits (or similar dinner rolls)
-
½ cup milk
-
1 small onion, diced (optional)
-
1 tsp garlic powder
-
Salt and pepper to taste
-
Fresh parsley or green onions for garnish (optional)
Instructions:
-
Preheat oven to 350°F (175°C). Grease a 9×13-inch casserole dish.
-
In a large bowl, combine the cream of chicken soup, sour cream, milk, garlic powder, salt, and pepper. Mix well.
-
Stir in the cooked chicken, diced onion (if using), and cheddar cheese.
-
Cut the biscuit dough into quarters or smaller pieces, then gently fold into the chicken mixture.
-
Spread the entire mixture evenly into the prepared casserole dish.
-
Top with extra shredded cheese if desired.
-
Bake for 30–35 minutes, or until the biscuits are cooked through and the casserole is bubbly and golden on top.
-
Let cool for a few minutes before serving. Garnish with parsley or green onions if you like.
Tips:
-
You can swap the cream of chicken soup for cream of mushroom or celery for a different flavor.
-
Add veggies like peas, corn, or chopped broccoli for more nutrition.
-
Use cooked turkey instead of chicken for a holiday twist.
