🥣 Classic Cabbage Soup
🧾 Ingredients (Serves 6–8):

2 tbsp olive oil

1 medium onion, chopped

2 garlic cloves, minced

3 carrots, sliced

2 celery stalks, chopped

1 small head of green cabbage, chopped (about 6 cups)

1 (14.5 oz) can diced tomatoes (with juices)

6 cups vegetable broth or chicken broth

1 tsp salt (to taste)

½ tsp black pepper

½ tsp paprika
-
½ tsp dried thyme or Italian seasoning

1 bay leaf (optional)

1–2 tbsp lemon juice or red wine vinegar (for brightness)
🔥 Instructions:
1. Sauté the Base:

In a large pot, heat olive oil over medium heat.

Add onion, carrots, and celery. Cook for 5–7 minutes until softened.

Add garlic and cook 1 minute more.
2. Add Cabbage & Tomatoes:

Stir in chopped cabbage and cook for 2–3 minutes until it begins to wilt.

Add canned tomatoes (with juice), broth, seasonings, and bay leaf.
3. Simmer:

Bring to a boil, then reduce heat.

Simmer uncovered for 25–30 minutes, until cabbage and veggies are tender.
4. Finish & Serve:

Stir in lemon juice or vinegar.

Taste and adjust seasoning (add more salt, pepper, or herbs as needed).

Remove bay leaf before serving.
