Here’s a hearty, healthy, and easy Cabbage Soup recipe — simple ingredients, big flavor, and perfect for chilly nights or light, nourishing meals. It’s budget-friendly, veggie-packed, and can be made in one pot!


🥣 Classic Cabbage Soup

🧾 Ingredients (Serves 6–8):

  • 2 tbsp olive oil

  • 1 medium onion, chopped

  • 2 garlic cloves, minced

  • 3 carrots, sliced

  • 2 celery stalks, chopped

  • 1 small head of green cabbage, chopped (about 6 cups)

  • 1 (14.5 oz) can diced tomatoes (with juices)

  • 6 cups vegetable broth or chicken broth

  • 1 tsp salt (to taste)

  • ½ tsp black pepper

  • ½ tsp paprika

  • ½ tsp dried thyme or Italian seasoning

  • 1 bay leaf (optional)

  • 1–2 tbsp lemon juice or red wine vinegar (for brightness)


🔥 Instructions:

1. Sauté the Base:

  • In a large pot, heat olive oil over medium heat.

  • Add onion, carrots, and celery. Cook for 5–7 minutes until softened.

  • Add garlic and cook 1 minute more.

2. Add Cabbage & Tomatoes:

  • Stir in chopped cabbage and cook for 2–3 minutes until it begins to wilt.

  • Add canned tomatoes (with juice), broth, seasonings, and bay leaf.

3. Simmer:

  • Bring to a boil, then reduce heat.

  • Simmer uncovered for 25–30 minutes, until cabbage and veggies are tender.

4. Finish & Serve:

  • Stir in lemon juice or vinegar.

  • Taste and adjust seasoning (add more salt, pepper, or herbs as needed).

  • Remove bay leaf before serving.


🍽️ Serving Ideas:

  • Serve with crusty bread, cornbread, or a sprinkle of Parmesan.

  • Add hot sauce or chili flakes for a spicy kick.

  • Refrigerates well and tastes even better the next day!


🔄 Optional Add-Ins:

  • Protein: Add cooked ground beef, sausage, or shredded chicken.

  • Grains: Stir in cooked rice, barley, or quinoa.

  • Beans: White beans or kidney beans for extra fiber and protein.

  • Tomato Paste: For a richer, thicker broth.
