🥞 Cottage Cheese Pancakes (No Flour)

Ingredients (makes 6–8 small pancakes)

  • 1 cup cottage cheese (small or large curd)

  • 3 large eggs

  • ½ cup rolled oats (or use oat flour for smoother texture — still no wheat flour)

  • 1 tsp vanilla extract

  • ½ tsp cinnamon (optional)

  • 1–2 tsp honey or maple syrup (optional, for sweetness)

  • Pinch of salt

  • Butter or oil, for cooking


Instructions

  1. Blend the batter:

    • Add all ingredients to a blender or food processor.

    • Blend until smooth (about 30 seconds). The batter will be pourable but thick.

  2. Heat the pan:

    • Preheat a nonstick skillet or griddle over medium heat.

    • Lightly grease with butter or oil.

  3. Cook the pancakes:

    • Pour 2–3 tablespoons of batter per pancake.

    • Cook 2–3 minutes, until edges look set and bottoms are golden.

    • Flip carefully and cook another 1–2 minutes.

  4. Serve:

    • Stack and serve warm with fresh fruit, Greek yogurt, maple syrup, or a drizzle of peanut butter.
