Creamy Ranch Potatoes
Ingredients
- 2 lbs baby potatoes (or Yukon Gold), halved
- ½ cup sour cream
- ½ cup heavy cream (or milk for lighter)
- 1 packet ranch seasoning mix
- 1 cup shredded cheddar cheese (optional but amazing)
- 2 tbsp butter, melted
- Salt & pepper, to taste
- Optional: chopped bacon or green onions
Instructions
- Preheat oven
- 375°F (190°C). Grease a baking dish.
- Cook potatoes
- Boil potatoes in salted water 10–12 minutes until just fork-tender. Drain well.
- Make the sauce
- In a bowl, whisk sour cream, heavy cream, ranch seasoning, and melted butter.
- Assemble
- Place potatoes in baking dish.
- Pour ranch mixture over potatoes and gently toss.
- Sprinkle with cheese if using.
- Bake
- Cover with foil and bake 25 minutes.
- Uncover and bake another 10–15 minutes until bubbly and lightly golden.
- Finish & serve
- Top with bacon bits or green onions if desired. Serve hot.
Tips & Variations
- Extra crispy top: Broil for 2–3 minutes at the end.
- Slow cooker version: Cook on low 4–5 hours; add cheese last 30 minutes.
