  • 2 large eggs

Instructions

  1. Prep sweet potatoes

    Cool, peel, and mash until smooth.
  2. Mix filling
    In a large bowl, whisk sugar, eggs, butter, evaporated milk, vanilla, spices, and salt.
    Stir in mashed sweet potatoes until creamy.
  3. Assemble
    Pour filling into unbaked pie crust.
  4. Bake
    Bake at 350°F / 175°C for 50–60 minutes, until the center is just set and a knife comes out mostly clean.
  5. Cool & serve
    Let cool completely to set.
    Serve plain or with whipped cream.
