🥘 Fajita Chicken Casserole

Ingredients

For the Chicken & Veggies:

  • 1 ½ lbs (680 g) chicken breasts, cooked and shredded (or rotisserie chicken)

  • 1 red bell pepper, sliced

  • 1 green bell pepper, sliced

  • 1 yellow bell pepper, sliced

  • 1 medium onion, sliced

  • 2 tbsp olive oil

For the Seasoning:

  • 1 tsp chili powder

  • 1 tsp paprika

  • ½ tsp cumin

  • ½ tsp garlic powder

  • ½ tsp onion powder

  • ¼ tsp crushed red pepper (optional)

  • Salt & pepper, to taste

For the Creamy Base:

  • 8 oz (225 g) cream cheese, softened

  • ½ cup sour cream (or Greek yogurt)

  • ½ cup salsa (mild or spicy)

  • 1 cup shredded cheddar (or Mexican blend) cheese

For Topping:

  • 1 cup shredded Monterey Jack or Pepper Jack cheese

  • Fresh cilantro, chopped (for garnish)

  • Lime wedges, for serving


Instructions

🔥 1. Sauté the Peppers & Onions

  1. Preheat oven to 375°F (190°C).

  2. Heat olive oil in a skillet over medium heat.

  3. Add sliced peppers and onions, season lightly with salt, and sauté for 5–6 minutes, until tender-crisp. Remove from heat.

🍗 2. Mix the Base

In a large bowl:

  1. Combine cream cheese, sour cream, salsa, and seasonings.

  2. Stir in the shredded chicken, ½ of the sautéed peppers, and 1 cup cheese.

🧀 3. Assemble

  1. Spread the mixture evenly in a greased 9×13-inch baking dish.

  2. Top with the remaining peppers and onions.

  3. Sprinkle with Monterey Jack or Pepper Jack cheese.

🔥 4. Bake

  • Bake 20–25 minutes, until hot and bubbly and cheese is melted and golden.

🌿 5. Garnish & Serve

  • Top with chopped cilantro and a squeeze of lime juice before serving.

  • Warm tortillas for scooping

  • Mexican rice or cauliflower rice

  • Avocado slices, pico de gallo, or guacamole

  • A drizzle of hot sauce or chipotle crema
