🥘 Mediterranean Ground Beef Skillet
Serves: 4–6 | Prep Time: 10 mins | Cook Time: 20 mins
One pan, low carb, high flavor
🛒 Ingredients:

1 lb ground beef (lean, 90/10 or 80/20)

1 small red onion, diced
-
3 cloves garlic, minced
-
1 medium zucchini, chopped
-
1 red bell pepper, diced
-
1 can (14.5 oz) diced tomatoes, drained
-
¼ cup Kalamata olives, sliced
-
1 tsp ground cumin
-
1 tsp oregano
-
½ tsp paprika
-
Salt & black pepper, to taste
-
½ cup crumbled feta cheese
-
2 tbsp fresh parsley or mint, chopped
-
Optional: juice of ½ a lemon
👩🍳 Instructions:
1. Brown the Beef

In a large skillet over medium heat, cook ground beef until browned.

Drain excess fat if needed.
2. Add Aromatics & Veggies

Add onion and garlic; cook 2–3 minutes until softened.

Stir in zucchini and bell pepper. Cook until just tender, about 5–6 minutes.
3. Season & Simmer

Stir in cumin, oregano, paprika, salt, and pepper.

Add drained tomatoes and olives. Let simmer for 5–7 minutes to blend flavors.
4. Finish & Serve

Turn off heat. Stir in lemon juice (if using) and sprinkle with feta and parsley.

Serve hot, as is or with a side of:
