Mediterranean Ground Beef Skillet

A Mediterranean Ground Beef Skillet is a quick, healthy, and flavorful one-pan meal that’s perfect for busy weeknights. Packed with protein, colorful veggies, and warm spices, it’s delicious on its own or served over rice, couscous, quinoa, or in lettuce wraps or pitas.


🥘 Mediterranean Ground Beef Skillet

Serves: 4–6 | Prep Time: 10 mins | Cook Time: 20 mins
One pan, low carb, high flavor


🛒 Ingredients:

  • 1 lb ground beef (lean, 90/10 or 80/20)

  • 1 small red onion, diced

  • 3 cloves garlic, minced

  • 1 medium zucchini, chopped

  • 1 red bell pepper, diced

  • 1 can (14.5 oz) diced tomatoes, drained

  • ¼ cup Kalamata olives, sliced

  • 1 tsp ground cumin

  • 1 tsp oregano

  • ½ tsp paprika

  • Salt & black pepper, to taste

  • ½ cup crumbled feta cheese

  • 2 tbsp fresh parsley or mint, chopped

  • Optional: juice of ½ a lemon


👩‍🍳 Instructions:

1. Brown the Beef

  • In a large skillet over medium heat, cook ground beef until browned.

  • Drain excess fat if needed.

2. Add Aromatics & Veggies

  • Add onion and garlic; cook 2–3 minutes until softened.

  • Stir in zucchini and bell pepper. Cook until just tender, about 5–6 minutes.

3. Season & Simmer

  • Stir in cumin, oregano, paprika, salt, and pepper.

  • Add drained tomatoes and olives. Let simmer for 5–7 minutes to blend flavors.

4. Finish & Serve

  • Turn off heat. Stir in lemon juice (if using) and sprinkle with feta and parsley.

  • Serve hot, as is or with a side of:

    • Rice, quinoa, couscous

    • Pita or flatbread

    • Over salad greens

    • Or in lettuce cups for a low-carb option


🔄 Optional Add-Ins:

  • Chickpeas or white beans for extra fiber

  • Spinach or kale, stirred in at the end

  • Pine nuts for crunch

  • A drizzle of tzatziki or Greek yogurt on top
