🌯 Rolled Taquitos with Fresh Salsa & Guacamole

🧂 Ingredients

For the taquitos

  • 12 corn tortillas (6-inch)

  • 2 cups shredded cooked chicken, beef, or pork (or beans for vegetarian)

  • ½ cup shredded cheese (cheddar, Monterey Jack, or Mexican blend)

  • ½ tsp cumin

  • ½ tsp chili powder

  • Salt & pepper, to taste

  • Oil, for frying (or brushing if baking)

For the fresh salsa

  • 2 Roma tomatoes, finely diced

  • ½ small onion, finely diced

  • 1 jalapeño, seeded and minced

  • ¼ cup fresh cilantro, chopped

  • Juice of 1 lime

  • Salt, to taste

For the guacamole

  • 2 ripe avocados

  • 1 tbsp lime juice

  • 2 tbsp onion, finely chopped

  • 1 tbsp cilantro, chopped

  • Salt & pepper, to taste


🔥 Instructions

1. Make the taquito filling

  • In a bowl, mix shredded meat (or beans), cheese, cumin, chili powder, salt, and pepper.

  • Warm the corn tortillas slightly (in the microwave for 20–30 seconds wrapped in a damp paper towel or on a hot skillet) until soft and pliable.

2. Assemble

  • Spoon 2–3 tablespoons of filling along one edge of each tortilla.

  • Roll tightly and secure with a toothpick if needed.

3. Cook

To fry:

  • Heat ½ inch of oil in a skillet over medium-high heat.

  • Fry 4–5 taquitos at a time, turning until golden and crispy (about 2–3 minutes per side).

  • Drain on paper towels.

To bake (lighter version):

  • Preheat oven to 425°F (220°C).

  • Place taquitos seam-side down on a parchment-lined baking sheet.

  • Brush or spray lightly with oil.

  • Bake 15–20 minutes, flipping halfway, until crisp and golden.


🍅 Fresh Salsa

  • Mix diced tomatoes, onion, jalapeño, cilantro, lime juice, and salt in a small bowl.

  • Chill until serving (flavor improves as it sits!).


🥑 Guacamole

  • Mash avocados in a bowl.

  • Add lime juice, onion, cilantro, salt, and pepper.

  • Mix to your preferred texture — chunky or smooth.


🍽️ To Serve

Arrange hot taquitos on a plate and serve with small bowls of salsa and guacamole for dipping.
