Snowball Cookies

Here’s a classic recipe for Snowball Cookies — also known as Russian Tea Cakes or Mexican Wedding Cookies. These buttery, nutty, melt-in-your-mouth cookies are rolled in powdered sugar to give them that snowy look, perfect for holidays or any cozy occasion!


❄️ Snowball Cookies Recipe

Ingredients (Makes about 24 cookies)

  • 1 cup (2 sticks) unsalted butter, softened

  • ½ cup powdered sugar (plus more for rolling)

  • 1 tsp vanilla extract

  • 2¼ cups all-purpose flour

  • 1 cup finely chopped nuts (walnuts, pecans, or almonds)

  • ¼ tsp salt


Instructions:

  1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.

  2. In a large bowl, cream together the softened butter and powdered sugar until smooth and fluffy.

  3. Mix in the vanilla extract.

  4. Gradually add the flour and salt, mixing until just combined.

  5. Stir in the chopped nuts.

  6. Roll dough into 1-inch balls and place on the baking sheet about 2 inches apart.

  7. Bake for 12–15 minutes, or until the bottoms are lightly golden (tops will still look pale).

  8. Allow cookies to cool on the baking sheet for 5 minutes, then roll warm cookies in powdered sugar.

  9. Once completely cooled, roll them again in powdered sugar for a thick snowy coating.


Tips:

  • Use finely chopped nuts for a tender texture.

  • Store cookies in an airtight container at room temperature for up to a week.

  • These cookies freeze well — just thaw and roll in powdered sugar before serving.
