For the Cookie Dough:

1. Make the cheesecake filling:

Mix cream cheese, powdered sugar, and vanilla until smooth.

Scoop into 1 tsp-sized mounds onto parchment paper.

Freeze for 20β30 minutes, until firm.
2. Make the cookie dough:

Cream butter and both sugars until fluffy (2β3 minutes).

Add egg, vanilla, and strawberry extract. Mix well.

In a separate bowl, whisk flour, baking soda, and salt.

Gradually add dry ingredients to wet.

Fold in crushed freeze-dried strawberries and a bit of food coloring if using.
3. Chill the dough:
