🥩 Classic Meatloaf (Juicy, Tender, Never Dry)

Here’s a reliable, flavorful meatloaf that stays moist and slices beautifully.

Ingredients

  • 1½ lbs (700 g) ground beef (80/20 for best flavor)
  • 1 cup breadcrumbs (or crushed crackers)
  • 1 small onion, finely diced
  • 2 cloves garlic, minced
  • 2 eggs
  • ½ cup milk
  • 2–3 tbsp ketchup
  • 1 tbsp Worcestershire sauce
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp dried thyme or Italian seasoning (optional)

Glaze

  • ⅓ cup ketchup
  • 1–2 tbsp brown sugar
  • 1 tsp mustard (optional)

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a large bowl, gently mix all meatloaf ingredients.
    ⚠️ Don’t overmix — that makes it dense.
  3. Shape into a loaf and place on a lined baking sheet (or in a loaf pan).
  4. Mix glaze ingredients and spread over the top.
  5. Bake 45–60 minutes, until internal temperature reaches 160°F (71°C).
  6. Rest 10 minutes before slicing (locks in juices).

  • ✔️ Use 80/20 beef — lean meat dries out.
  • ✔️ Add grated carrot or a spoon of sour cream for extra moisture.
  • ✔️ Let it rest before cutting.

Cheesy Center: Add shredded cheddar in the middle.
Turkey Version: Use ground turkey + 1 tbsp olive oil to prevent dryness.
Low-Carb: Swap breadcrumbs for almond flour or crushed pork rinds.
BBQ Style: Replace ketchup glaze with BBQ sauce.
