🫐🍪 Blueberry Oat Bars

These blueberry oat bars are a perfect snack or breakfast treat — naturally sweet, hearty, and full of fiber. They’re easy to make and portable for on-the-go.


🛒 Ingredients (Makes 12 bars)

For the Base & Crust:

  • 1½ cups rolled oats
  • 1 cup all-purpose flour (or whole wheat for healthier option)
  • ½ cup brown sugar
  • ½ teaspoon baking powder
  • ¼ teaspoon salt
  • ½ cup unsalted butter, melted

For the Blueberry Filling:

  • 2 cups fresh or frozen blueberries
  • ¼ cup honey or maple syrup
  • 1 teaspoon lemon juice
  • 1 tablespoon cornstarch (to thicken)

Optional Topping:

  • ¼ cup rolled oats
  • 2 tablespoons brown sugar
  • 2 tablespoons butter

👩‍🍳 Instructions

1️⃣ Preheat Oven

Preheat oven to 350°F (175°C). Grease or line an 8×8-inch baking pan.

2️⃣ Make the Crust

  • In a bowl, mix oats, flour, brown sugar, baking powder, and salt.
  • Stir in melted butter until crumbly.
  • Press 2/3 of the mixture into the bottom of the pan to form an even layer.

3️⃣ Prepare Blueberry Filling

  • In a small saucepan, combine blueberries, honey (or syrup), lemon juice, and cornstarch.
  • Cook over medium heat, stirring, until thickened and bubbly (3–5 minutes).
  • Pour over the crust layer in the pan.

4️⃣ Add Topping

  • Sprinkle remaining oat mixture over the blueberry layer.
  • Optional: mix oats, sugar, and butter for a crumblier top.

5️⃣ Bake

  • Bake for 30–35 minutes, until the top is golden brown.
  • Let cool completely before cutting into bars.

🍽️ Serving Ideas

  • Serve as-is for a snack or breakfast.
  • Add a drizzle of yogurt or a smear of nut butter.
  • Pair with coffee or tea for a morning treat.

💡 Tips

  • Frozen blueberries work perfectly — no need to thaw.
  • For extra flavor, add a teaspoon of vanilla extract to the filling.
  • Store in an airtight container for up to 4 days, or freeze for 2–3 months.
