Ahh, Amish Macaroni Salad 🥄 — sweet, creamy, tangy, and perfect for potlucks or summer BBQs. It’s a little sweeter than traditional deli-style macaroni salad, which is what makes it special.

Here’s a classic version:


🥗 Amish Macaroni Salad

🛒 Ingredients (Serves 6–8)

  • 2 cups elbow macaroni (uncooked)
  • 3 hard-boiled eggs, chopped
  • 1 cup celery, finely diced
  • 1 small onion, finely diced
  • ½ cup shredded carrot
  • ½ cup sweet pickle relish

Dressing:

  • 1 cup mayonnaise
  • 2 tbsp yellow mustard
  • ¾ cup granulated sugar
  • ¼ cup apple cider vinegar
  • ½ tsp salt
  • ¼ tsp black pepper
  • ¼ tsp paprika

👩‍🍳 Instructions

1️⃣ Cook the Pasta

  • Boil macaroni until just tender (don’t overcook).
  • Drain and rinse with cold water.
  • Let it cool completely.

2️⃣ Make the Dressing

In a bowl, whisk together:

  • Mayo
  • Mustard
  • Sugar
  • Vinegar
  • Salt, pepper, and paprika

It should be creamy and slightly sweet-tangy.


3️⃣ Combine

  • In a large bowl, mix macaroni, eggs, celery, onion, carrot, and relish.
  • Pour dressing over and stir gently until fully coated.

4️⃣ Chill

  • Cover and refrigerate at least 2 hours (overnight is even better).
  • Stir before serving.

✨ Tips for the Best Flavor

  • Dice veggies small for authentic texture.
  • If it thickens in the fridge, stir in 1–2 tbsp milk before serving.
  • Let it rest — the flavor improves as it sits.
