1. Make the crust

  • Mix flour, salt, and sugar
  • Cut in cold butter until crumbly
  • Add ice water gradually until dough forms
  • Divide into 2 discs, wrap, and chill for 30 minutes

2. Prepare the filling

  • Toss sliced apples with sugar, spices, flour, vanilla, and lemon juice
  • Let sit for 10–15 minutes to release juices

3. Assemble the pie

  • Roll out one dough disc and place in pie dish
  • Add apple filling evenly
  • Dot with small bits of butter (optional for richness)
  • Roll out second dough and cover top (or lattice style)
  • Seal edges and cut small vents

4. Bake

  • Preheat oven to 375°F (190°C)
  • Bake for 45–55 minutes until golden and bubbling
  • Cover edges with foil if browning too quickly

5. Cool and serve

  • Let cool at least 1–2 hours (this helps it set)
  • Serve warm—optionally with vanilla ice cream
