Here’s a simple and flavorful baked chicken thighs recipe that comes out juicy with a crispy skin:


Ingredients (4 servings)

  • 4 bone-in, skin-on chicken thighs
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika (smoked paprika works well)
  • ½ teaspoon dried thyme or rosemary (optional)
  • Lemon wedges, for serving

Instructions

  1. Preheat Oven
    Preheat your oven to 425°F (220°C).
  2. Prepare Chicken
    Pat the chicken thighs dry with paper towels. This helps the skin crisp up.
  3. Season
    Rub olive oil over the chicken thighs, then season with salt, pepper, garlic powder, paprika, and herbs.
  4. Bake
    Place chicken thighs skin-side up on a baking sheet or in a baking dish. Bake for 35–45 minutes, or until the internal temperature reaches 165°F (74°C) and the skin is golden brown and crispy.
  5. Rest & Serve
    Let the chicken rest for 5 minutes before serving. Serve with lemon wedges for extra brightness.

Tips

  • For extra crispiness, broil for the last 2–3 minutes, keeping a close eye to avoid burning.
  • You can marinate the chicken for a few hours in olive oil, lemon juice, garlic, and herbs for extra flavor.
  • Serve with roasted vegetables, mashed potatoes, or a fresh salad for a complete meal.
