Here’s a classic baked pineapple casserole—sweet, buttery, and perfect as a side dish or dessert 🍍✨


Baked Pineapple Casserole

Ingredients (Serves 6–8)

  • 1 can (20 oz) pineapple chunks or tidbits, drained

  • 1 cup sugar

  • 4 large eggs

  • 6 tbsp melted butter

  • 1 cup crushed buttery crackers (like Ritz)

  • Optional: ½ cup shredded cheddar cheese (Southern-style twist)


Instructions

  1. Preheat Oven
    Preheat to 350°F (175°C). Grease a baking dish.

  2. Mix Filling
    In a bowl, whisk sugar and eggs until smooth.
    Stir in melted butter and pineapple.

  3. Assemble
    Pour mixture into baking dish.
    Sprinkle crushed crackers evenly over the top.
    Add cheese if using.

  4. Bake
    Bake 35–40 minutes until golden and set in the center.

  5. Cool & Serve
    Let cool slightly before serving.


Tips & Variations

  • Less sweet: Reduce sugar to ¾ cup

  • Extra crunch: Add chopped pecans to the topping
