Beef Rice Casserole

Ingredients

  • 1 lb (450 g) ground beef
  • 1 cup uncooked long-grain rice
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 can (14 oz) diced tomatoes
  • 1 cup beef broth
  • 1 tsp paprika (optional: smoked for depth)
  • 1 tsp Italian seasoning
  • Salt & pepper, to taste
  • 1 cup shredded cheese (cheddar, mozzarella, or a mix)
  • 1–2 tbsp olive oil

Instructions

1. Preheat & prepare

  • Preheat oven to 350°F (175°C).
  • Grease a 9×13-inch baking dish.

2. Cook the beef

  • Heat olive oil in a skillet over medium heat.
  • Sauté onion and garlic until soft.
  • Add ground beef and cook until browned. Drain excess fat.
  • Stir in diced tomatoes, beef broth, paprika, Italian seasoning, salt, and pepper.

3. Combine with rice

  • Stir uncooked rice into the beef mixture.
  • Transfer everything to the prepared baking dish.
  • Cover tightly with foil.

4. Bake

  • Bake 45–50 minutes, or until rice is tender.
  • Remove foil, sprinkle shredded cheese on top, and bake an additional 10 minutes until melted and bubbly.

Tips for Extra Flavor

  • Add frozen peas or corn for color and nutrition.
  • For a creamier casserole, mix ½ cup sour cream or cream of mushroom soup into the beef mixture before baking.
  • Leftovers reheat well and taste even better the next day.
