This recipe combines fluffy biscuits with savory roast beef and melted cheese, served with a rich au jus dipping sauce — basically a French dip sandwich in bite-sized comfort food form.


🛒 Ingredients (Serves 6–8)

For the Biscuits:

  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • ½ teaspoon baking soda
  • 1 teaspoon salt
  • 6 tablespoons cold unsalted butter, cubed
  • ¾ cup buttermilk

For the Filling:

  • 1 lb thinly sliced roast beef (deli-style or leftover roast)
  • 6 oz Swiss or provolone cheese, sliced
  • 1 tablespoon Dijon mustard (optional)

For the Au Jus:

  • 2 cups beef broth
  • 1 teaspoon Worcestershire sauce
  • Salt & pepper to taste
  • Optional: a pinch of garlic powder or onion powder

👩‍🍳 Instructions

1️⃣ Preheat Oven

  • Preheat to 425°F (220°C) and line a baking sheet with parchment paper.

2️⃣ Make the Biscuit Dough

  • In a large bowl, mix flour, baking powder, baking soda, and salt.
  • Cut in butter until mixture resembles coarse crumbs.
  • Stir in buttermilk just until dough comes together.

3️⃣ Shape Biscuits

  • Turn dough onto a floured surface and gently pat to about ½-inch thick.
  • Cut into 6–8 rectangles or rounds.

4️⃣ Add Filling

  • Place a slice of roast beef and cheese on half of each biscuit piece.
  • Optional: spread a thin layer of Dijon mustard on the beef.
  • Fold over or cover with another piece of dough, sealing edges gently.

5️⃣ Bake

  • Place stuffed biscuits on baking sheet and bake 12–15 minutes, until golden brown.
  • Remove and let cool slightly.

6️⃣ Prepare Au Jus

  • In a small saucepan, combine beef broth, Worcestershire sauce, salt, pepper, and optional garlic/onion powder.
  • Heat until warm.

🍽️ Serve

  • Serve biscuits hot with au jus for dipping.
  • Optional sides: roasted vegetables, simple salad, or chips.

💡 Tips

✔ For extra gooey cheese, use mozzarella and Swiss mix.
✔ Leftover biscuits can be reheated and dipped for lunch the next day.
✔ You can add caramelized onions for more flavor.
✔ Mini versions are great for parties or appetizers.
