🥐 Buttermilk Biscuits

Ingredients

  • 2 cups all-purpose flour
  • 1 tbsp baking powder
  • ½ tsp baking soda
  • 1 tsp salt
  • 6 tbsp cold butter (cubed)
  • ¾–1 cup cold buttermilk

  1. Preheat oven to 220°C (425°F).
  2. In a bowl, mix flour, baking powder, baking soda, and salt.
  3. Cut in cold butter until mixture looks like coarse crumbs.
  4. Stir in buttermilk just until dough forms (don’t overmix).
  5. Roll or pat dough to about 1-inch thick and cut into biscuits.
  6. Place on baking tray and bake 12–15 minutes until golden.

🍳 Sausage Gravy

Ingredients

  • 250–300 g breakfast sausage
  • 2 tbsp flour
  • 2 cups milk
  • Salt & black pepper (generous pepper is key!)

  1. Cook sausage in a skillet over medium heat until browned.
  2. Sprinkle flour over sausage and stir for 1–2 minutes.
  3. Slowly add milk while stirring to avoid lumps.
  4. Simmer until thick and creamy.
  5. Season with salt and plenty of black pepper.

🍽️ To Serve

  • Split warm biscuits in half
  • Spoon hot sausage gravy generously over the top
