Cheesy Cauliflower Bake

Ingredients (Serves 4–6)

  • 1 large head of cauliflower, cut into florets
  • 2 tbsp butter
  • 2 tbsp all-purpose flour
  • 1 ½ cups milk (whole or 2%)
  • 1 cup shredded sharp cheddar cheese
  • ½ cup grated Parmesan cheese
  • ½ tsp garlic powder
  • ½ tsp paprika
  • Salt and pepper to taste
  • Optional topping: ¼ cup breadcrumbs or extra Parmesan for crunch

Instructions

  1. Preheat oven to 375°F (190°C). Grease a baking dish.
  2. Steam or boil cauliflower for 5–7 minutes until just tender. Drain well.
  3. Make the cheese sauce:
    • Melt butter in a saucepan over medium heat.
    • Stir in flour, cook 1 minute.
    • Slowly whisk in milk until smooth.
    • Add cheddar, Parmesan, garlic powder, paprika, salt, and pepper. Stir until melted and creamy.
  4. Combine cauliflower and cheese sauce in the baking dish. Mix gently so florets are coated.
  5. Optional topping: sprinkle breadcrumbs or extra Parmesan over the top.
  6. Bake for 20–25 minutes, until golden and bubbly.

  • Use low-fat cheese for a lighter version
  • Add cooked bacon, ham, or cooked chicken for protein
