Chicken Soup Potatoes

Here’s a comforting recipe for Chicken Soup with Potatoes—perfect for a hearty, warming meal. 🍲🥔


Ingredients (Serves 4–6)

  • 1 lb Chicken (thighs, drumsticks, or breast, bone-in for more flavor)
  • 4 cups Chicken broth or water with bouillon
  • 3 Potatoes, peeled and diced
  • 2 Carrots, sliced
  • 2 Celery stalks, sliced
  • 1 Onion, chopped
  • 2–3 cloves Garlic, minced
  • 1 tsp Thyme or other herbs
  • Salt & Black pepper to taste
  • Optional: ½ cup Noodles or rice for extra heartiness

Instructions

1. Prepare the chicken

  • In a large pot, add chicken and broth.
  • Bring to a boil, then reduce heat and simmer 20–25 minutes until chicken is cooked through.
  • Remove chicken, shred the meat, and discard bones (if using bone-in pieces).

2. Add vegetables

  • Add potatoes, carrots, celery, and onion to the broth.
  • Simmer 15–20 minutes until vegetables are tender.

3. Add shredded chicken

  • Return shredded chicken to the pot.
  • Stir in garlic, thyme, salt, and pepper.
  • Simmer 5 more minutes to blend flavors.

4. Optional: Add noodles or rice

  • If using, cook noodles or rice separately and add to the soup just before serving, or cook in the soup for the last 10 minutes (adjust liquid as needed).

5. Serve

  • Ladle into bowls, garnish with fresh Parsley if desired.
  • Serve warm with crusty bread or crackers.

✅ Tips

  • For extra flavor, sauté onions, garlic, and carrots in a little oil before adding broth.
  • Use Yukon Gold or red potatoes for a creamier texture.
  • Leftovers taste even better the next day after flavors meld.
