Ingredients (makes ~12 clusters)

  • 1 cup pecan halves
  • 12 soft caramel candies (or ½ cup caramel bits)
  • ½ cup semisweet or milk chocolate chips
  • 1 teaspoon butter (optional, for smoother chocolate)
  • Sea salt for sprinkling (optional)

Instructions

  1. Prep the baking sheet
    • Line a baking sheet with parchment paper.
  2. Arrange the pecans
    • Place 2–3 pecan halves together to form a small cluster base on the parchment.
  3. Add the caramel
    • Unwrap caramel candies and place 1 piece on top of each pecan cluster.
    • Microwave for 20–30 seconds until soft and slightly melted (or melt over a double boiler).
  4. Melt the chocolate
    • In a microwave-safe bowl, melt chocolate chips with butter in 20-second intervals, stirring until smooth.
  5. Top with chocolate
    • Spoon melted chocolate over the caramel-covered pecans, fully covering the caramel.
  6. Optional: Sprinkle sea salt
    • Add a pinch of sea salt on top of each cluster for a sweet-salty flavor.
  7. Chill to set
    • Refrigerate clusters for 20–30 minutes until chocolate and caramel are firm.
  8. Serve
    • Remove from parchment and enjoy! Store in an airtight container at room temperature or in the fridge.

  • Use soft caramel candies for easier melting.
