coconut-pecan frosting

Coconut-Pecan Frosting is a rich, nutty, and creamy topping perfect for Cakes, Cupcakes, or even brownies. 🥥🌰


Ingredients (about 2 cups frosting)

  • 1 cup Butter, softened
  • 4 cups Powdered sugar
  • ½ cup Coconut milk
  • 1 tsp Vanilla extract
  • 1 cup Shredded coconut
  • ½ cup Chopped pecans

Instructions

1. Cream the Butter

  • In a large bowl, beat softened butter until smooth and creamy.

2. Add Sugar and Liquids

  • Gradually add powdered sugar, beating well after each addition.
  • Mix in coconut milk (or cream) and vanilla extract until smooth.

3. Fold in Coconut and Pecans

  • Gently fold in shredded coconut and chopped pecans.
  • Adjust consistency with more powdered sugar (thicker) or milk/coconut milk (thinner).

4. Frost Your Cake or Cupcakes

  • Spread or pipe frosting over cooled baked goods.
  • Optional: sprinkle extra toasted pecans or coconut on top for garnish.

  • Toast the pecans lightly in a dry skillet for extra flavor and crunch.
  • Use unsweetened coconut if you want a less sweet, more natural taste.
  • This frosting is best applied to completely cooled cakes to prevent melting.
