Ingredients (4 servings)

  • 4 boneless, skinless chicken breasts (or thighs)
  • Salt & black pepper, to taste
  • 2 tbsp olive oil or butter
  • 8 oz (225 g) mushrooms, sliced (cremini or button)
  • 3 cloves garlic, minced
  • ½ cup chicken broth
  • ¾ cup heavy cream (or half-and-half)
  • ½ tsp dried thyme or Italian seasoning
  • ¼ cup grated Parmesan (optional)
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Season & sear chicken
    • Season chicken on both sides with salt and pepper.
    • Heat oil/butter in a large skillet over medium-high heat.
    • Sear chicken 4–5 minutes per side until golden.
    • Remove and set aside (not fully cooked yet).
  2. Cook mushrooms
    • In the same skillet, add mushrooms.
    • Cook until browned and moisture evaporates (4–5 minutes).
    • Add garlic and cook 30 seconds.
  3. Make the sauce
    • Pour in chicken broth, scraping up browned bits.
    • Stir in cream and thyme.
    • Simmer 3–5 minutes until slightly thickened.
  4. Finish cooking
    • Return chicken to skillet.
    • Simmer uncovered 5–7 minutes until chicken is cooked through and sauce thickens.
    • Stir in Parmesan if using.
  5. Serve
    • Garnish with parsley.
    • Serve over rice, pasta, mashed potatoes, or with crusty bread.
