Instructions

1. Cook the Sausage

  1. Heat olive oil in a large pot over medium heat.
  2. Add sausage, breaking it up with a spoon, and cook until browned and cooked through (~5–7 min). Remove some excess fat if necessary.

2. Sauté the Vegetables

  1. Add onion, garlic, carrots, and celery to the pot.
  2. Cook 4–5 minutes until softened and fragrant.

3. Add Broth and Pasta

  1. Pour in chicken broth and add Italian seasoning.
  2. Bring to a boil, then reduce heat to a simmer.
  3. Stir in ditalini pasta and cook according to package instructions (~8–10 minutes) until tender.

4. Make it Creamy

  1. Lower heat to medium-low.
  2. Stir in heavy cream and Parmesan cheese until melted and smooth.
  3. Season with salt and pepper to taste.

5. Serve
