Crockpot Split Pea Soup

This is a simple, high-fiber, high-protein soup thatโ€™s great for weight control and heart health โ€” especially since youโ€™ve cut added sugar.

๐Ÿ›’ Ingredients

  • 2 cups dried green split peas (rinsed, no soaking needed)
  • 1 medium onion, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 3 cloves garlic, minced
  • 1 bay leaf
  • 1 tsp dried thyme
  • ยฝ tsp black pepper
  • 6 cups low-sodium chicken or vegetable broth
  • 1โ€“2 cups water (as needed)
  • Optional: 1 smoked ham bone or 1 cup diced ham

  1. Add everything to the crockpot.
  2. Stir well.
  3. Cook:
    • Low: 7โ€“8 hours
    • High: 4โ€“5 hours
  4. Remove bay leaf (and ham bone if used).
  5. Blend slightly if you want it smoother (optional).
  6. Adjust salt at the end.
