🧁 Crumb Cake (Classic Coffee Cake Style)

Soft, buttery cake with a thick cinnamon crumb topping — perfect with coffee.


🛒 Ingredients

For the Crumb Topping

  • 1 cup all-purpose flour
  • 1/2 cup brown sugar
  • 1/4 cup granulated sugar
  • 1 tsp cinnamon
  • Pinch of salt
  • 1/2 cup melted butter

For the Cake

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter (softened)
  • 2 eggs
  • 1 cup sour cream (or Greek yogurt)
  • 2 tsp vanilla extract
  • 1 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt

👩‍🍳 Instructions

1️⃣ Make the Crumb Topping

  • Mix flour, sugars, cinnamon, and salt.
  • Stir in melted butter until large crumbs form.
  • Set aside.

2️⃣ Make the Cake Batter

  • Preheat oven to 350°F (175°C).
  • Grease a 9×9-inch pan.
  • Cream butter and sugar until fluffy.
  • Add eggs one at a time, then vanilla.
  • Mix in sour cream.
  • In a separate bowl, whisk dry ingredients.
  • Gradually combine dry ingredients with wet ingredients.

3️⃣ Assemble

  • Spread batter evenly in the pan.
  • Generously sprinkle crumb topping over the batter.

4️⃣ Bake

  • Bake 35–45 minutes, until a toothpick comes out clean.
  • Cool before slicing.

  • For extra crumb: double the topping.
  • Add chopped pecans for crunch.
  • Dust with powdered sugar before serving.
