Cucumber tomato salad

Here’s a fresh and simple Cucumber Tomato Salad—light, crunchy, and perfect for warm days. 🥒🍅

Ingredients

  • 2 Cucumbers, sliced
  • 2 cups Tomatoes, chopped or halved (cherry tomatoes work well)
  • ¼ Red Onion, thinly sliced
  • 2 tablespoons Olive Oil
  • 1 tablespoon Lemon Juice or White Vinegar
  • Salt and Black Pepper to taste
  • Optional garnish: chopped Parsley or Dill

Instructions

  1. In a large bowl, combine the cucumbers, tomatoes, and red onion.
  2. Drizzle with olive oil and lemon juice (or vinegar).
  3. Season with salt and black pepper.
  4. Toss gently until everything is evenly coated.
  5. Sprinkle parsley or dill on top and serve.

Tips

  • Chill the salad for 15–20 minutes before serving for extra freshness.
  • Add Feta Cheese for a Mediterranean-style version.
  • A pinch of Sugar can balance the acidity if the tomatoes are very tart.
