Ingredients

  • 2 cups Cooked chicken
  • 6 cups Chicken broth
  • 2 cups Egg noodles
  • 1 cup Carrot, sliced
  • 1 cup Celery, sliced
  • 1 medium Onion, chopped
  • 2 cloves Garlic, minced
  • 1 tsp Thyme
  • 1 tsp Parsley
  • Salt and pepper to taste
  • Optional: 1 tbsp Butter

Instructions

  1. Sauté veggies:
    In a large pot, melt butter (if using) and sauté onion, garlic, carrot, and celery for 3–5 minutes until slightly softened.
  2. Add broth and seasonings:
    Pour in chicken broth, thyme, and parsley. Bring to a boil.
  3. Add chicken and noodles:
    Add shredded chicken and egg noodles. Reduce heat and simmer for 8–10 minutes until noodles are tender.
  4. Season and serve:
    Taste and adjust with salt and pepper. Serve hot, garnished with extra parsley if desired.

Tips for Extra Deliciousness

  • Use Bone-in chicken thighs for richer broth.
  • Add a squeeze of Lemon for brightness.
