🧄 Fluffy Cottage Cheese Garlic Rolls

Ingredients

Dough

  • ¾ cup warm milk (110°F / 43°C)
  • 2¼ tsp active dry yeast
  • 1 tbsp sugar
  • ¾ cup cottage cheese (small curd, room temperature)
  • ¼ cup melted butter
  • 1 egg
  • 1 tsp salt
  • 3½–4 cups all-purpose flour

Garlic Butter Topping

  • 4 tbsp butter, melted
  • 3 cloves garlic, minced
  • 1 tbsp fresh parsley, chopped
  • ¼ tsp salt
  • Optional: ¼ cup grated Parmesan

Instructions

  1. Activate yeast:
    Stir yeast and sugar into warm milk. Let sit 5–10 minutes until foamy.
  2. Mix wet ingredients:
    In a large bowl, mix cottage cheese, melted butter, egg, and salt.
  3. Make dough:
    Add yeast mixture to wet ingredients.
    Gradually mix in flour until soft dough forms.
  4. Knead & rise:
    Knead 6–8 minutes until smooth and elastic.
    Cover and let rise 1–1½ hours until doubled.
  5. Shape rolls:
    Divide dough into 12 equal pieces.
    Shape into balls and place in greased baking dish.
  6. Second rise:
    Cover and rest 30 minutes.
  7. Bake:
    Bake at 375°F (190°C) for 18–22 minutes until lightly golden.
  8. Garlic finish:
    Mix garlic butter ingredients.
    Brush generously over hot rolls. Sprinkle Parmesan if using.
