French Onion Chicken

🧅🍗 French Onion Chicken

A rich, savory dish inspired by French onion soup — but made heartier with juicy chicken breasts smothered in caramelized onions and melted cheese.


🛒 Ingredients (Serves 4)

  • 4 boneless, skinless chicken breasts
  • 2 large yellow onions, thinly sliced
  • 2 tablespoons butter
  • 1 tablespoon olive oil
  • 3 cloves garlic, minced
  • 1 cup beef broth (low sodium)
  • ½ cup dry white wine (optional, but recommended)
  • 1 teaspoon fresh thyme (or ½ tsp dried)
  • Salt and black pepper to taste
  • 1 cup shredded Gruyère cheese (or Swiss/Mozzarella)
  • Fresh parsley (optional garnish)

👩‍🍳 Instructions

1️⃣ Caramelize the Onions

  1. Heat butter and olive oil in a large skillet over medium heat.
  2. Add sliced onions and a pinch of salt.
  3. Cook slowly for 20–25 minutes, stirring occasionally, until deep golden brown.
  4. Add garlic and cook for 1 more minute.

Tip: Low and slow = sweeter, richer flavor.


2️⃣ Cook the Chicken

  1. Season chicken with salt, pepper, and thyme.
  2. Remove onions from pan and set aside.
  3. In the same skillet, sear chicken 4–5 minutes per side until golden.
  4. Remove and set aside (it will finish cooking later).

3️⃣ Build the Sauce

  1. Deglaze the pan with white wine (scrape up browned bits).
  2. Add beef broth and simmer 3–4 minutes.
  3. Return onions and chicken to the skillet.
  4. Spoon onions over the chicken.

4️⃣ Add Cheese & Finish

  • Top each piece with shredded Gruyère.
  • Cover and cook on low until cheese melts OR
  • Transfer skillet to oven (400°F / 200°C) and broil 2–3 minutes until bubbly.

🍽️ Serving Suggestions

Serve with:

  • Mashed potatoes
  • Crusty bread
  • Roasted green beans
  • Cauliflower mash (low-carb option)

  • Add a splash of balsamic vinegar to the onions for depth.
  • Use bone-in chicken thighs for juicier results.
  • Sprinkle with fresh thyme before serving.
