A rich, savory dish inspired by French onion soup — but made heartier with juicy chicken breasts smothered in caramelized onions and melted cheese.
🛒 Ingredients (Serves 4)
- 4 boneless, skinless chicken breasts
- 2 large yellow onions, thinly sliced
- 2 tablespoons butter
- 1 tablespoon olive oil
- 3 cloves garlic, minced
- 1 cup beef broth (low sodium)
- ½ cup dry white wine (optional, but recommended)
- 1 teaspoon fresh thyme (or ½ tsp dried)
- Salt and black pepper to taste
- 1 cup shredded Gruyère cheese (or Swiss/Mozzarella)
- Fresh parsley (optional garnish)
👩🍳 Instructions
1️⃣ Caramelize the Onions
- Heat butter and olive oil in a large skillet over medium heat.
- Add sliced onions and a pinch of salt.
- Cook slowly for 20–25 minutes, stirring occasionally, until deep golden brown.
- Add garlic and cook for 1 more minute.
Tip: Low and slow = sweeter, richer flavor.
2️⃣ Cook the Chicken
- Season chicken with salt, pepper, and thyme.
- Remove onions from pan and set aside.
- In the same skillet, sear chicken 4–5 minutes per side until golden.
- Remove and set aside (it will finish cooking later).
3️⃣ Build the Sauce
- Deglaze the pan with white wine (scrape up browned bits).
- Add beef broth and simmer 3–4 minutes.
- Return onions and chicken to the skillet.
- Spoon onions over the chicken.
4️⃣ Add Cheese & Finish
- Top each piece with shredded Gruyère.
- Cover and cook on low until cheese melts OR
