Hungarian Cold Dough Nut Cookies

Here’s a traditional Hungarian Cold Dough Nut Cookie recipe (often called Hideg diós sütemény). These are tender, sliceable cookies made from a chilled dough, layered or rolled with a walnut filling—old-world, not too sweet, and perfect with coffee or tea.


🇭🇺 Hungarian Cold Dough Nut Cookies

Ingredients

Dough

  • 2½ cups (300 g) all-purpose flour
  • 1 cup (225 g) unsalted butter, cold & cubed
  • ¾ cup (90 g) powdered sugar
  • 2 egg yolks
  • 1 tsp vanilla extract
  • Zest of 1 lemon (optional but traditional)
  • Pinch of salt

Nut Filling

  • 1½ cups finely ground walnuts
  • ½ cup (100 g) sugar
  • ½ tsp cinnamon
  • 2–3 tbsp warm milk (just enough to moisten)

To Finish

  • Powdered sugar for dusting

🥣 Instructions

1. Make the dough

  1. In a bowl, combine flour, powdered sugar, and salt.
  2. Cut in cold butter until mixture resembles coarse crumbs.
  3. Add egg yolks, vanilla, and lemon zest.
  4. Gently knead just until dough comes together.
  5. Divide into 2 equal portions, flatten into discs, wrap, and refrigerate at least 2 hours (or overnight).

2. Prepare the nut filling

  1. Mix ground walnuts, sugar, and cinnamon.
  2. Stir in warm milk until spreadable but not wet.

3. Assemble

  1. Roll one dough portion into a rectangle (about ¼-inch thick) on a floured surface.
  2. Spread half the nut filling evenly over the dough.
  3. Roll tightly into a log (like a jelly roll).
  4. Wrap and chill again for 30–45 minutes.
  5. Repeat with second dough portion.

4. Slice & bake

  1. Preheat oven to 350°F / 175°C.
  2. Slice logs into ½-inch rounds.
  3. Place on parchment-lined baking sheet.
  4. Bake 12–15 minutes, just until bottoms are lightly golden (tops should stay pale).

5. Finish

  • Cool completely, then dust generously with powdered sugar.

  • These cookies are meant to be tender, not crunchy
  • Chilling is key—this is why they’re called cold dough cookies
  • Flavor improves after a day or two

Variations (Very Hungarian)
