Hungarian cottage cheese palacsinta

Posted on January 17, 2026 by Admin

Here’s an authentic Hungarian cottage cheese palacsinta (Túrós palacsinta) recipe — simple, traditional, and absolutely delicious 🇭🇺

🥞 Hungarian Cottage Cheese Palacsinta (Túrós Palacsinta)

Soft, thin crepes filled with lightly sweetened cottage cheese, often baked or served warm with sour cream.

🧾 Ingredients

Palacsinta (Crepes)

  • 1 cup (120 g) all-purpose flour
  • 1 cup (240 ml) milk
  • 1 large egg
  • 1 tbsp sugar
  • Pinch of salt
  • 1 tbsp neutral oil or melted butter

Filling (Túrós töltelék)

  • 1½ cups (350 g) Hungarian túró
(or dry cottage cheese / farmer’s cheese, drained well)
  • 2–3 tbsp sugar (to taste)
  • 1 tsp vanilla sugar or vanilla extract
  • Zest of ½ lemon (traditional, optional)
  • 1 egg yolk (optional, for richness)

Topping (Optional but Traditional)

  • Sour cream
  • Powdered sugar
  • Melted butter
  • Raisins (optional)

🔥 Instructions

1. Make the Palacsinta Batter

  1. Whisk flour, egg, milk, sugar, salt, and oil until smooth
  2. Batter should be thin, like heavy cream
  3. Rest 10–15 minutes

2. Cook the Palacsinta

  1. Heat a lightly greased non-stick pan
  2. Pour a thin layer of batter, swirl to coat
  3. Cook ~1 minute per side until lightly golden
  4. Stack on a plate and cover to keep warm

3. Prepare the Filling

Mix túró, sugar, vanilla, lemon zest, and egg yolk until creamy but slightly textured.

🥞 Assemble

  • Spread filling down the center
  • Roll or fold into rectangles

🔥 Optional Baked Version (Very Traditional)

  1. Place filled palacsinta in a buttered baking dish
  2. Spoon sour cream mixed with a little sugar on top
  3. Bake at 350°F (180°C) for 15–20 minutes
  4. Dust with powdered sugar before serving

😋 What Makes It Hungarian

  • Lemon zest in the filling
  • Sour cream topping
  • Light sweetness (never overly sweet)
  • Thin, delicate crepes — not pancakes

💡 Tips

  • If using regular cottage cheese, drain and mash or briefly blend
  • For extra authenticity, use vanilla sugar instead of extract
  • Serve warm — it’s best fresh

If you want, I can:

  • Adapt this to American ingredients only
  • Make a savory túrós palacsinta
  • Share the grandma-style version from rural Hungary
