🍝 Italian Drunken Noodles

Ingredients (2–3 servings)

  • 8 oz (225 g) fettuccine, spaghetti, or linguine
  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • ½ tsp red chili flakes (adjust to taste)
  • 1 small onion, thinly sliced
  • 1 bell pepper, thinly sliced
  • 1 cup cherry tomatoes, halved
  • ½ cup white wine (or chicken/vegetable broth)
  • 1 tsp Italian seasoning
  • Salt & black pepper, to taste
  • ¼ cup grated Parmesan (optional)
  • Fresh basil, chopped (for garnish)
  • Optional protein: shrimp, chicken, or sausage slices

Instructions

  1. Cook pasta
    • Boil pasta in salted water until al dente. Drain, reserving ½ cup pasta water.
  2. Sauté aromatics
    • Heat olive oil in a large skillet over medium heat.
    • Sauté garlic, chili flakes, and onion until fragrant (~1–2 minutes).
    • Add bell peppers and cook 2–3 minutes.
  3. Deglaze with wine
    • Pour in white wine (or broth) and let simmer 2–3 minutes to reduce slightly.
  4. Add tomatoes & seasoning
    • Stir in cherry tomatoes and Italian seasoning.
    • Cook until tomatoes soften (~3 minutes).
  5. Combine with pasta
    • Toss cooked pasta into the skillet.
    • Add a splash of reserved pasta water if needed for sauciness.
    • Season with salt and pepper.
    • Stir in Parmesan if using.
  6. Serve
    • Garnish with fresh basil and extra Parmesan.
    • Enjoy immediately while warm and saucy!
