🥗 Marinated Cucumber, Onion & Tomato Salad

This is a fresh, tangy, and slightly sweet salad that gets better as it sits—perfect for hot days or as a light side dish.


🥒 Ingredients

  • 2 cups cucumbers, sliced
  • 1 cup tomatoes, chopped or sliced
  • 1/2 cup onion, thinly sliced (red or white)

Marinade

  • 1/3 cup vinegar (white or apple cider)
  • 2 tablespoons olive oil
  • 1–2 tablespoons sugar (adjust to taste)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

1. Prep the veggies

  • Slice cucumbers and onions thin
  • Cut tomatoes into bite-sized pieces

2. Make the marinade

  • In a bowl, whisk together vinegar, olive oil, sugar, salt, and pepper

3. Combine

  • Add all vegetables to a large bowl
  • Pour marinade over and toss well

4. Chill & marinate

  • Cover and refrigerate for at least 1–2 hours
