Ingredients (Serves 3–4)

Beef

  • 1 lb flank steak or sirloin, thinly sliced
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 2 tablespoons vegetable oil

Ranchero Sauce

  • 3 ripe tomatoes, chopped (or 1 cup canned tomatoes)
  • 1 white onion, sliced
  • 2 jalapeño peppers (or serranos), sliced
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • ½ teaspoon paprika
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

1️⃣ Prepare the Beef

  1. Season beef slices with salt and pepper.
  2. Heat oil in a large skillet over medium-high heat.
  3. Sear beef quickly (1–2 minutes per side) until browned but still tender. Remove and set aside.

2️⃣ Make the Ranchero Sauce

  1. In the same skillet, sauté onions, garlic, and jalapeños until softened.
  2. Add chopped tomatoes, cumin, paprika, salt, and pepper.
  3. Cook 5–7 minutes, stirring occasionally, until the sauce thickens slightly.

3️⃣ Combine & Simmer

  1. Return beef to the skillet.
  2. Stir to coat beef in the sauce.
  3. Simmer 2–3 minutes to let flavors meld.

4️⃣ Serve

  • Garnish with fresh cilantro.
  • Serve with warm tortillas, rice, or beans.

  • Sear beef quickly — overcooking makes it tough.
  • Adjust jalapeños to control spiciness.
  • For a richer sauce, blend half of the tomatoes before cooking.
