Pineapple Vanilla Icebox Dessert

Posted on April 3, 2026 by Admin

Pineapple Vanilla Icebox Dessert is a super easy, no-bake treat—cool, creamy, and perfect for warm days 🍍❄️ It sets in the fridge (“icebox”), so no oven needed!

🍍 Ingredients

  • 1 can crushed pineapple (drained)
  • 1 pack vanilla pudding mix
  • 2 cups cold milk
  • 1 cup whipped cream (or whipped topping)
  • 1 pack plain biscuits or graham crackers
  • Optional: shredded coconut or chopped nuts

🥄 How to Make It

  1. Prepare pudding
Whisk vanilla pudding mix with cold milk until thick.
  2. Add pineapple
Fold in the drained crushed pineapple.
  3. Add creaminess
    Gently mix in whipped cream.
  4. Layer it up
In a dish, add a layer of biscuits/graham crackers → then a layer of the creamy mixture.
Repeat layers until everything is used.
  5. Chill
Refrigerate for at least 4–6 hours (overnight is best).

😋 Tips

  • The biscuits soften in the fridge and turn cake-like
  • Chill longer for better texture
  • Add a splash of pineapple juice for extra flavor

🍰 Variations

  • Add sliced bananas between layers
  • Use chocolate biscuits for a twist
  • Top with extra whipped cream and pineapple chunks

🍽️ Serving

Serve cold, straight from the fridge—perfect for summer or after a heavy meal.
