Instructions

  1. Preheat oven:
    Preheat your oven to 350°F (175°C). Grease and flour an 8-inch round cake pan.
  2. Mix dry ingredients:
    In a bowl, whisk together flour, ground pistachios, baking powder, and salt.
  3. Cream butter and sugar:
    In a separate bowl, beat butter and sugar until light and fluffy.
  4. Add eggs and vanilla:
    Beat in eggs one at a time, then add vanilla.
  5. Combine wet and dry ingredients:
    Gradually add the dry mixture to the butter mixture, alternating with milk. Mix until smooth.
  6. Fold in pineapple:
    Gently fold in the drained crushed pineapple.

    Pour batter into the prepared pan and bake for 30–35 minutes, or until a toothpick inserted comes out clean. Let the cake cool completely.
  8. Prepare frosting (optional):
    Beat cream cheese and butter until smooth. Add powdered sugar and vanilla, and mix until creamy.
  9. Assemble:
    Frost the cake if desired. Garnish with chopped pistachios and pineapple slices.
